The main courses blend classic techniques with contemporary accents, featuring dishes such as tenderly cooked turbot with vin Jaune sauce, pigeon with a beetroot variation and jus, and saddle of lamb with Mediterranean herbs and seasonal vegetables, showcasing the depth and precision of our cuisine. Each plate is deliberately composed, pared down to the essentials yet full of expression.

The meal concludes with fine desserts that balance sweetness, freshness and texture, such as a Grand Marnier soufflé or a modern interpretation of classic French pâtisserie.
